Sweet and simple fruit notes in a big Brazilian-bodied coffee.
Last August we traveled to Brazil with our import partner Ally Brazil. Our goal was to find the best coffee of the harvest. We cupped upwards of 50 coffees and two stood out.
The Black Diamond with its notes of chocolate, caramel, almond and full body seemed ideal for espresso. The Blue Diamond carries a delicious citric acidity as found in lemons & tangerines, with a nearly perfect, lingering finish. Together these coffees formed a complex and delicious cup. We knew what we had to do - we bought both.
We believe this coffee has it all. Besides having a great flavor profile, it is also fully traceable. Each bag of green coffee comes with a QR code containing all the farm information plus a complete flavor analysis from certified Q Graders.

Chocolate, Tangerine, Almond
This coffee is grown at some of the highest altitudes in the remote regions of the Andies Mountains (1700-2200 meters). The Typica, Cattura and the coveted Yellow Bourbon varietals thrive here and develop high sugar and acid content – a roasters dream.
Indigenous farmers from the original Paez people have given particular care to this coffee as it is the lifeblood of this community kept far away from the rest of the world. Jon Varon is the patriarch of this farm and under his leadership all lots and varietals are processed separately offering a unique experience of the coffees terroir.
Thanks to our strong relationship and their diligent efforts, we were able to develop a unique blend of varietals which include the perfect amount of extra sweet Yellow Bourbon.

Reko washing station started production in 2001 and is located in Kochere, Yirgacheffe at an altitude of around 1850-2100 meters. During harvest, which normally takes place between late October and mid-January, about 850 farmers bring their red cherries to the washing station.
The washed coffees are first washed with water from a nearby river, after which they are pulped by an old Agard pulping-machine. The mucilage is removed by traditional fermentation, which lasts 36-48 hours depending on the weather conditions. The coffee is then dried on raised African beds (over 120 beds are present at the washing station) for 10-12 days.

Blueberry, Cream, Pink Lemonade
Los San Juanes is a farm located in the county of San Antonio La Paz in the department of El Progreso in Guatemala. Part of the mountain range known as Sierra de Las Minas, Los San Juanes goes from 1700 to 1900 meters in altitude. This is the highest non volcanic chain of mountains in Guatemala outside of the Huehuetenango Region.
This farm is owned and operated by Don Higinio Gómez and his son Carlos Gómez, who were among the first visionary farmers to transition into coffee over forty years ago. The farm has an extension of 60 hectares where Borbon, Pache San Ramón and an assorted mix of unidentified yellow varietals grow under native forest shade. A micro climate of humid forest dominated by pine trees gives character to this new profile of coffee that we are recently starting to discover.
Los San Juanes can be summed up in one word - sweetness. This coffee overwhelms with a sweet smoothness throughout. With notes of caramel and honey it finishes with a lingering taste of dried cherry.

This pleasing coffee grown in Acatenango, Guatemala, near Antigua, is renowned for its classic Guatemalan flavor profile: mellow, balanced, and chocolatey. We’re impressed not only with the end result of this coffee, but with the Buena Vista farm itself. A biodiverse, organized approach to farming has allowed the coffee plants grown in this farm’s nutrient-rich volcanic soil to thrive.
Whether you’re preparing it as drip coffee or as espresso, the harmonies between chocolate, spice and mild fruity acidity, along with a robust, full body, are endless in this coffee. Its flavor profiles also make it a natural companion for milk.

Similar to our other decafs the New York Espresso Decaf is not "just decaf". We treat our decafs with pride because decaf drinkers are so dedicated to drinking coffee that they drink it for the flavor and the ritual. So why not make it taste good?

THE KOPERASI PEDAGANG KOPI KETIARA is a women-run cooperative that has over 890 grower-members who cultivate coffee on more than 830 hectares of land. The Ketiara Cooperative was started in 2008 by Ibu Rahmah, the current chairwoman, who had operated and managed her family’s coffee business for 20 years--purchasing cherries, processing the green, and selling to local traders. The passionate commitment of the co-op’s women managers to have all members working together in support of coffee production has enabled Ketiara to expand and become an important supplier to larger coffee traders in Medan, the capital of North Sumatra.
After much discussion, the cooperative members voted to become organic and Fairtrade certified in 2012, making a commitment to use these proceeds to create programs for health, education, and public infrastructure projects that will benefit all co-op members.

Dallis Bros., like the World’s Fairgrounds that also call it home, is Queens-bred through and through, defining ourselves by a history of innovation and progress. Following this inspiration, we created a blend to represent the magic that can happen when worlds of coffee come together. Our Unisphere is a balancing act of clean, beautiful coffees that brew a sweet morning cup.
Unisphere is a lighter roast profile which emphasizes the qualities inherent to each single origin coffee. Flavors of caramel, plum, nougat, malt, and gently glowing brightness all shine though this universally delicious blend. The balanced and sweet flavor profile augments other foods well, and makes for a great cup not just early in the morning, but throughout the whole day.

Here at Dallis Brothers Coffee we respect decaf drinkers. They're the people who drink coffee not for the buzz, but for the ritual and the flavor.
In order to produce a good decaf coffee we need to first start with good green (unroasted) coffee. Then that coffee should be decaffienated without use of chemicals — like the Swiss Water Process method. The Swiss Water Process involves putting the green coffee in a hot water bath to extract the caffeine and flavor compounds in the coffee. Then the water is run through a carbon filter where the caffeine attaches to the filter. The flavor compounds are reintroduced into the coffee and dried.
We go through all the effort of finding you a nice decaf so that you can enjoy drinking it. Our Unisphere Blend Decaf is delicious with notes of milk chocolate and subtle notes of cinnamon wrapped around a creamy body.
