Ethiopia Wakito Medallu
Wakito Medallu is the highest altitude co-op in Jimma, Ethiopia. The coffee is picked ripe and then put through a de-pupler that also removes the coffee fruit, or mucilage. Then the coffee (with a small amount of mucilage remaining) is soaked overnight underwater. Then the coffee is dried on raised beds for about 10 days where it is further cleaned by hand at the parchment stage.
In our nearly 100 years of operation, we have seen a lot of co-ops and farms. The motivation seen in these particular co-ops is incredible. Why? Before these washing stations were installed, there was only one way to process their coffee and price to sell it: by a low-quality commercial natural process. Now the farmers are earning a true price premium, first on being washed and second on the incredbile quality in the cup.
