Ethiopia is a land of legend, one of its most famous being the discovery of coffee. This beautiful coffee from the Yirgacheffe region is a natural process coffee, allowing it to express some of the bright and fruity qualities in coffees of this region. The secret to its success is in the processing: our friend coffee producer Samuel Demisse pays the hand-sorters—traditionally women in many coffee producing countries—a higher wage to select beans with exacting care. Painstakingly sorting out defective beans one at a time can take more than three times the normal rate of speed—a level of care that we finds is worth it in the cup.
